I made chicken tikka masala for dinner tonight and decided to improvise a side dish: Sauteed zucchini and corn with cumin, coriander, salt, and pepper. I had no idea what it would taste like or if it would work, but it’s delicious, which makes me exceedingly happy. This is why I love cooking; it makes me feel like there’s something in this world I can actually do well.
